No bake energy bites recipe

These little treats are great for nursing mothers if you add the brewers yeast, but can also be modified to be extra fiber-licious if your kiddos (or you) ever struggle with regularity.

There are many versions of this recipe across the internet as well as on the back of the Trader Joe’s bag of flax seed so modify in whatever way works best for your taste and health needs at this time.

Prep Time: 15 min

Additional Time: 1 hour

Servings: 2 dozen balls

Ingredients

  • 1 cup rolled oats
  • ½ cup semisweet chocolate chips (mini ones or peanut butter chips work great too)
  • ½ cup ground flax seed
  • ½ cup crunchy or smooth peanut butter
  • ⅓ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ⅔ cup coconut flakes (optional if you’re not a fan of this flavor)
  • 1 ½ tablespoons brewers yeast (optional, but great for nursing mommas)
  • 1 tablespoon chia seeds (can double for extra fiber)

Directions

  1. Gather all ingredients.
  2. Stir all ingredients together in a bowl.
  3. Roll into 24 balls with your hands.
  4. Arrange balls in a container and freeze until set, about 1 hour.
  5. Serve and enjoy!
